Pumpkin Spice Syrup

Fall is in the air, which means it is time to enjoy the warm scents of; cinnamon, apple, pumpkin, nutmeg and whatever else helps you cozy on in to your favourite blanket while adapting to the ever cooling temperatures.  It also means that pumpkin spice lattes are back, which tends to take a swing at the 'ol bank account..  So when I stumbled upon a pumpkin spice syrup recipe, there wasn't a doubt in my mind that I had to give it a try.

With only a few ingredients that most of us have in our kitchen already, you can turn any drink into pure yumminess.  I mean any drink... I've put it in coffee, in a mug of warmed and frapped milk, I also hear it works great on ice with milk and Kalhua, the possibilities appear to be endless!

Ingredients
- 1 cup granulated sugar
- 1 cup of water
- 2 tablespoons of pumpkin puree
- 2 teaspoons of pumpkin spice

First step is to make a simple syrup, so mix up your water and sugar in a pot on med-high heat until it just reaches a boil. (make sure to stir the mixture while heating so as to avoid burning the sugar)  Reduce heat.  Now time to add the yumminess, so get the pumpkin puree and spice into the pot with the simple syrup.  Bring it back to a boil, but this time on low heat.  Once the pumpkin and sugar is all mixed in, take the pot off the heat source and let it cool for approximately 10 minutes.  Transfer the yummy concoction to an airtight container and it can be used for up to 3 weeks!
